I made some cookies last night that were really delicious, definitely worth sharing! They are light and airy, a cakelike texture. So here's the recipe for Pumpkin Chocolate Chip Cookies:
Whisk together:
3 c flour
1 t baking powder
1 t baking soda
1/2 t salt
1 t cinnamon
Cream together:
1/4 c butter
3/4 c vegetable oil
1 c sugar
Separately, mix together, then add to creamed mixture:
1 egg
1 cup canned pumpkin
1 t vanilla
Slowly add dry ingredients, scraping the bowl often.
Stir in:
1 c milk chocolate chips
Drop by round 1/3 c scoopful onto parchment lined cookie sheets. Bake at 350 for 10-12 minutes, careful not to overbake. Cool for 10 minutes, then remove cookies to wire rack.
Here's the recipe for my new Holiday Favorite, Eggnog Coffee Cake. I took one to our neighbors last night and they came by today with some wine and very RAVE reviews for the cake. I'm making one for us tonight, to eat tomorrow morning with Mimosas!
Night Before Eggnog Coffee Cake
Prepare ahead, mix with fork til crumbly set aside. Streusel topping:
1/3 c sugar
1 T flour
1 T soft butter
1/2 t nutmeg
1/4 t cinnamon
Whisk together, set aside:
2 1/2 c flour
1 1/2 t baking powder
1/2 t baking soda
1/2 t salt
Cream together:
First:
1 c sugar
1/2 c soft butter
Then add:
1 c eggnog
1 c sour cream
1 t rum extract
2 eggs
Add in dry ingredients, mix til just smooth. Pour into greased 9x13 inch pan, sprinkle streusel over top, cover, refridgerate overnight. Bake, uncovered, for 35-40 minutes at 350.
Drizzle over cooled cake, Eggnog Glaze:
1/2 c powdered sugar
2 T eggnog
